Good-bye Lasagna

     Last night I decided to bake dinner for a friend who just had a baby.  I of course volunteered myself to make dinner for them with no plans of what I was going to make them.  So where do I go?  My trusty pinterest board: Dinners.  Most recently pinned and at the top of my board, Lasagna Rolls Ups, with the description "Lasagna Roll Ups...can be made in a single serving and then frozen!"  Perfect!  I can make enough for them and me and we will each have leftovers to freeze, therefor giving us each two meals.  And since my husband doesn't really eat leftovers, I can freeze them individually and have a ready to eat meal anytime.  Why would anyone ever make a regular lasagna again?  I mean its rude to cut someone's lasagna in half before you deliver it to them because you need to feed your family too but it's genius to make individual roll ups because it looks like it's supposed to be that way, which it is :)
     Downfall...this recipe made a huge mess in my kitchen.  A yummy mess, but a mess indeed.


Yes, it was the recipe not me :) so warning, your kitchen may have the meteorologist casting the weather from your home.  Mess aside, this recipe was amazing!  I thought I had an awesome recipe for lasagna but this was fabulous.  My personal opinion is I might trade out the ricotta cheese for cottage cheese because that is one of the things I LOVED about my lasagna recipe; that and the fact that it has pepperonis on top.  Oh, and one more of my side notes...I doubled this recipe and only ended up with 18 roll ups when the original recipe says it will make 12.  It could be that I put too much inside of the rolls up considering they squished out everywhere when rolling, but hey, I'm not complaining over the squishy goodness.  Thanks Cooking Classy for this awesome recipe!  I hope you try it out and if you like it as much as I did go give her some love :) Any comments or suggestions with your attempt can be commented below (would love to see your kitchens afterwards, but only if it makes mine look good haha)...Enjoy!
